Ingredients

  • 2 ten ounce packages frozen baby lima beans
  • 4 tablespoons butter
  • 2/3 cup sliced green onions
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon dry tarragon
  • 8 sprigs parsley
  • 1 cup cream
  • 28 ounces chicken broth

Step 1

1. Cook lima beans with butter, green onions and curry powder until tender, about 15 minutes.

2. Empty beans and liquid into blender and add salt, pepper, tarragon, parsley and cream. Blend from low to high until smooth.

3. Pour ingredients into a saucepan and add broth and heat.

Note: You can substitute half and half for cream.
