- 1 8-lb. prime rib roast, bone in
- salt and ground black pepper
- 1 head garlic

Step 1
Heat a smoker to 250F with desired wood (I use hickory). Coat the prime rib heavily in salt and pepper. Peel the individual garlic cloves and place them in the bottom of the pan in which you will smoke the prime rib. Don't use a white dish in the smoker. Smoke 4 hours or about 25 minutes a lb. for medium rare (145F) or 30 minutes a pound for medium (160F). Cover loosely with foil and let rest for at least 30 minutes to allow the juices to redistribute throughout the meat before slicing. Serve with garlic.
