Ingredients

  • 3 cups flour (pack it down in cup when you measure)
  • 2 tsp. cream of tartar (this is important)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp sea salt
  • 1/2 cup salted butter, softened
  • 1/2 cup strong cheddar cheese
  • 1/2 cup Asiago cheese***
  • 2 large eggs, beaten
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese for a topping (use real Parmesan cheese-it's so much better than the type in the can)

Preparation

Step 1

***-My family isn't fond of Asiago cheese, so I leave it out and make mine with double cheddar.
FIRST STEP
Use a medium-size mixing bowl to combine flour, cream of tartar, baking powder, baking soda, and salt. Stir them all together. Cut in the salted butter just as you would for piecrust.
If you have a food processor, you can use it for step one. Process until it is the texture of cornmeal.
SECOND STEP
Stir in shredded cheese. Then add the beaten eggs and the sour cream in that order. Mix everything all up together. Add the milk and stir until everything in thoroughly combined.
THIRD STEP
Drop the biscuits onto a greased baking sheet, 12 large biscuits to a sheet.
Once the biscuits are on the baking sheet, you an wet your fingers and shape them if you like.
Sprinkle shredded Parmesan on top of each biscuit.
Bake at 425 degrees F. for 12-14 minutes or until they are golden brown on top.
Cool the biscuits for at least 5 min on the cookie sheet, then remove them with a spatula. Serve them in a towel lined basket to keep them warm.
