Orzo, Spinach, and Tomato Salad

This salad makes a great compliment to a Rib-Eye steak on the grill. Recipe from "Weeknight Grilling with the BBQ Queens"

    pound orzo, cooked according to package directions

  • 1

    pound baby spinach, torn into small pieces

  • 1

    cup cherry or grape tomatoes, cut in half

  • 1

    cup (8 oz.) feta cheese, crumbled

  • 4

    tablespoons olive oil

  • 1

    tablespoon fresh lemon juice

  • 2

    cloves garlic, minced

  • sea salt

  • fresh ground black pepper


Combine the orzo in a large serving bowl with the spinach, tomatoes, and feta. In a small bowl, whisk the olive oil, lemon juice, and garlic together. Season with salt and pepper, then pour over the salad and toss to blend. Let stand for a few minutes and serve.
