Caramel Corn Puffs

Ingredients
- Remove from heat and add:
- 5 bags of Chester's Puffcorn, butter flavored (found in the chip aisle)
- 1 lb. of butter (do not substitute)
- 2 lbs. of brown sugar
- 1 Cup of light corn syrup
- 2 t. of baking soda
- 2 t. of vanilla

Preparation
Step 1
1. Pour the puff corn in a HUGE bowl
2. Melt the following stirring constantly, in a deep sauce pot and boil for 3 minutes:
- 1 lb. of butter
- 2 lbs. of brown sugar
- 1 Cup of light corn syrup
3. Remove from heat and add:
- 2 t. of baking soda
- 2 t. of vanilla
4. Stir quickly for about a minute. This mixture will become a bit opaque.
5. Pour over the puffcorn and mix well
6. Pour into large roasting pans. (these need to be greased)
7. Cook for 1 hour in a 250 F oven, stirring every 15 minutes
8. Cool completely
