Oven roasted potatoes with garlic and rosemary

Ingredients
- 2 pound red potatoes, scrubbed clean, dried, quartered.
- 3 Tbs olive oil
- 2 medium garlic cloves, minced
- 2 Tbs fresh rosemary or 1 Tbs dried

Preparation
Step 1
1. Adjust oven rack to middle position and heat to 425.
2. Toss potatoes and oil oil in medium bowl and season with salt and pepper.
3. Place potatoes flesh side down in a single layer, on a cookie sheet. Cover tightly with foil and cook about 20 minutes.
4. While the potatoes are roasting mince garlic. add 1/8 teaspoon of salt and mash with flat side of knife until in becomes a paste. Place paste in a medium bowl.
5. Remove foil and cook 15 minutes more until the side touching the pan is golden brown.
6. Using a metal spatula, turn potatoes over so the other flesh side touches the pan. Cook 5-10 minutes more. In last 3 minutes sprinkle rosemary over potatoes.
7. Remove from oven and toss with the garlic. Serve.
