Ingredients
- Lemon Cake
- 1/2 lb. butter (softened)
- 2 c. sugar
- 3 eggs
- 3 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup buttermilk
- 2 T. tightly packed lemon zest (about 2 lemons)
- 2 T. fresh lemon juice
- Note: buy 4-5 lemons for zesting and juice
- Lemon Icing
- 1 lb. confectioner’s sugar
- 1 stick butter (softened)
- 3 T. packed lemon zest
- 1/2 cup fresh lemon juice

Preparation
Step 1
Preheat oven to 325. Grease and lightly flour 10 inch tube pan.
Cream butter and sugar. Beat in eggs, one at a time.
Sift flour, soda, and salt. Stir dry ingredients into egg mixture, alternating with the buttermilk.
Add lemon zest and juice.
Pour batter into pan. Bake for about 1 hour until cake tester comes out clean.
Cool cake for 10 minutes in pan and then remove. Spread icing while cake is a little warm.
Icing:
Cream sugar and butter. Mix in lemon zest and juice. Spread on top and bottom of warm cake.
