  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 cup sugar
  • Lemon or orange zest
  • 10 tablespoons butter, chilled
  • 1 cup heavy cream
  • 3/4 cup dried fruit (cranberries or currants)
  • Parchment paper

Preparation

Step 1

Preheat oven to 375. Line cookie sheets with parchment paper.

Mix together flour, baking powder, sugar, and zest. Cut in the chilled butter until mixture resembles coarse meal.

Stir in cream and fruit, mixing just until the dough holds together.

Turn the dough onto a lightly floured board and shape into two separate rounds. Cut each round in half and then in thirds so you are getting six scones to a round.* Sprinkle with sugar and bake for 12-15 minutes.

*If you want to make mini-scones, shape into four separate rounds, cut each in half and then in thirds.
