Ingredients

  • Dressing:
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons sugar
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon salt
  • 3 1/2 tablespoons light olive oil
  • 1 tablespoon poppy seeds
  • Salad:
  • 24 cherry tomatoes, halved
  • 2 pink grapefruit, peeled, all white membrane removed, and sectioned
  • 2 small avocados, peeled and cubed
  • 1 cup chopped scallions (about 5 medium)
  • lettuce of choice

Preparation

Step 1

1. In a small bowl, whisk together the vinegar, sugar, mustard, and salt until sugar and salt dissolve.

2. Whisking constantly, add the oil in a slow steady stream until the dressing is think and smooth. Stir in the poppy seeds.

3. In a large serving bowl, combine the tomatoes, grapefruit sections, avocados, scallions, and lettuce. Pour the dressing over the salad and toss gently.
