Ingredients

  • 4 tbsp butter, melted
  • 1 1/4 cups flour
  • 3/4 cups cornmeal
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 1/3 cup honey

Preparation

Step 1

Preheat oven to 375. Line 12 cup muffin tin. Whisk together flour, cornmeal, baking powder, salt and baking soda.
In a large bowl, whisk together eggs, buttermilk, honey and melted butter. Add flour mix and stir to combine.
Scoop batter into tins.
Bake until golden, 25-30 minutes.
