Italian Sausage Soup

Ingredients

  • 2 lbs sweet or hot Italian sausage
  • 6 cloves garlic
  • 2 medium onions, chopped
  • 2 (28 oz) cans Italian style tomatoes
  • 4-5 cups beef broth
  • 1/2 cup dry red wine
  • 4 tbs fresh parsley, minced
  • 3 tsp basil
  • 2 green peppers, chopped
  • 2 zucchinis, chopped
  • 1 (1 lb) pkg uncooked bow tie pasta
  • grated Parmesan cheese

Preparation

Step 1

Remove meat from casing, break up meat in soup pot. Saute with garlic and onions in a small amount of broth until sausage is browned. Drain grease, add tomatoes, broth, wine, parsley and basil. Simmer 45 minutes, stir occasionally. Add zucchini and peppers, simmer 20 more minutes. *30 minutes before serving stir in pasta and cook until tender. Serve with Parmesan cheese.

*I cook the pasta on the side and put some in the bowls then laddle soup over. The pasta will absorb the liquid and become mushy and leave you with little broth if you let it sit. Unless you eat all the soup! Chill the soup if you have leftovers, then add the rest of the pasta.
