Cola Cake

Ingredients

  • Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1/2 lb (2 sticks) butter
  • 3 Tablespoons baking cocoa
  • 1 cup Coca-cola
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups mini marshmallows
  • 2 eggs
  • Icing:
  • 1/4 lb (1 stick) butter
  • 3 tablespoons baking cocoa
  • 6 tablespoons Coca-cola
  • 4 cups confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup chopped almonds

Preparation

Step 1

Cake:
1. Preheat the oven to 325 degrees F.
2. In a mixing bowl, sift together the flour and sugar. Set it aside.
3. Melt the butter in a saucepan. Stir in the cocoa and Coca-cola, and bring to a boil. Remove from heat.
4. Pour the liquid mixture over the flour and sugar. Add the buttermilk, baking soda, vanilla, marshmallows, and eggs. Stir well.
5. Pour the mixture into a greased 9x13-inch pan. Bake for 30 minutes. Remove from oven and ice while hot.

Icing:
6. Melt the butter. Stir in the cocoa and Coca-cola. Remove from heat.
7. Add the confectioners sugar, vanilla, and pecans. Stir well.
8. Pour icing over hot cake.
