Ingredients
- 1 cup soft butter
- 4 eggs
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- grated rind of 2 lemons
- 2 cups sugar
- 1/2 teaspoon salt
- 3 cups flour
- 1 cup chopped nuts
- 3-4 tablespoons lemon juice
- Lemon Syrup
- 1/3 cup lemon juice
- 1/3 - 1/2 cup sugar
- 1/4 cup water
Preparation
Step 1
Preheat oven to 350°. Prepare pans with butter and flour.
Cream butter and sugar. Beat in eggs, 1 at a time. Sift salt, baking soda, and flour, and add alternately with the buttermilk, beginning and ending with dry ingredients. Fold in nuts, rind and lemon juice. Bake 40 - 60 minutes or until done.
Lemon Syrup
Boil all ingredients in small saucepan for 2 minutes. Drizzle the lemon syrup over the tops of cooled loaves, set completely before wrapping.
