Ingredients
- Makes 1/4-1/3 puree and 1 cup oil
- 2 Heads Garlic
- 3/4 Cup Canola oil
- 1/4 Cup EV Olive Oil

Step 1
Trim tops off of garlic heads and place in Garlic roaster, drizzle with the 1/4 Cup EV Olive oil, process garlic, when finished take out and let cool until cool enough to pop cloves out of papery skins.
Place cloves into medium sauce pan and cover with the Canola oil, place over a medium low heat and bring to a simmer cook for 10-15 minutes keeping a careful eye on the cloves, don't let them get too brown, they should be lightly golden and tender.
Let cool for 30 minutes.
Transfer the cooled garlic to a sieve to drain, reserving the oil. Transfer the garlic to a food processor and puree until smooth, scraping down the sides occasionally. Store the puree and the oil separately in the refrigerator.
