Fillets of Sole in Tomato Onion Sauce

Ingredients
- 250 gm sole fillet
- 1 big size Tomato
- 1/2 Onion
- 2 cloves Garlic
- 1 tbsp Ketchup
- 1 tbsp Brown Sugar
- 1 tsp Light Soy Sauce
- 50 gm Potato Starch
- 55 gm Olive Oil
- Salt and pepper to taste
Details
Preparation
Step 1
Wash and dry sole fillet with kitchen towel. Season with sale and pepper to taste
Cut tomato and onion into small cubes. Mince garlic
Gently pat potato starch on both side of the fillet
Heat 4 tbsp of canola oil in frying pan, gently place sole fillet in. Cook for 5 min, then flip to the other side for another 5 min. or until cooked
Remove and place on serving plate
Heat the remainder oil in frying pan. Pour in onions and stir fry for 4 min
Add in minces garlic and stir fry for 1 min. Add in tomatoes and stir fry for 5 min.
Add in ketchup, sugar and light soy. Stir fry till all ingredients are soft. Add salt and pepper to taste
Spoon on top of shallow fried sole fillet
