Crockpot German-Style Potato Soup

Ingredients

  • 4 medium peeled and chopped potatoes
  • 2 stalks sliced celery
  • 1 medium chopped white or yellow onion
  • 8 ounces sliced smoked sausage
  • 1 can beef broth
  • 2 Tablespoons cider vinegar
  • 1 Tablespoon sugar
  • 1/4 teaspoon pepper
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon dry mustard
  • 2 cups chopped cabbage
  • 3 Tabslepoons chopped parsley

Preparation

Step 1

Spray crockpot lightly with canola oil. Add the potatoes, celery, onion, smoked sausage, and beef broth to the crockpot. Turn the crockpot to its low heat setting. In a small bowl, mix the cider vinegar, sugar, pepper, celery seed, and dry mustard. Pour over the ingredients in the crockpot. Cook for 8-9 hours. Add the cabbage, and cook till tender, about 20 minutes. Garnish with parsley.
