Ingredients

  • 1 boneless pork tenderloin about 1- 1 1/4 lb
  • Salt and Pepper to taste
  • 6 strips of bacon
  • 2 tbs each, honey, balsamic vinegar, and red wine
  • 2 tbs chopped fresh rosemary
  • 2 tbs minced shallots
  • 2 cups seedless red and green grapes

Preparation

Step 1

1. Season pork with salt and pepper. Wrap bacon around pork, securing with toothpicks. Cook in a large skillet over med-high heat until golden brown on all sides.

2. Preheat oven to 375 degrees. Place pork in a large shallow baking dish. Stir together, honey, vinegar, wine, rosemary and shallots in a small bowl and pour over pork.

3. Bake, uncovered for 15 min. Add grapes to dish and cook for 15 min more or until pork reached an internal temp of 160 degrees

4. Let stand for 5 min before slicing. Transfer to a platter and surround with grapes and any sauce in dish. Sprinkle with additional rosemary.
