Mini "Whatever" Frittatas

You can use whatever cheese, meat (or go meatless), veggies you have on hand. Really good no matter what you use.

Ingredients
- 1/4 lb. cooked ham, turkey sausage, or bacon (note: meat is optional) and/or chopped peppers, asparagus, roasted red peppers, spinach, or whatever
- 1 cup shredded cheese (I use low fat, you can use whatever you want)
- 6 eggs
- 4 egg whites
- 3 T herb of your choice (chives, basil, etc.)
- 2 T fat-free milk (I have also used water and a pinch of cream of tartar with good results)
- 1/4 t each salt and pepper
Preparation
Step 1
Divide meat among 12 muffin cups coated with cooking spray; top with cheese. Add other solid ingredients (veggies).
Beat eggs and egg whites in a large bowl. Add salt, pepper, and herb if using. Fill muffin cups 3/4 full.
Bake @375 for 22-25 minutes or until knife inserted in center comes out clean.
Serve warm. Can be made ahead and reheated in the microwave.
