Ingredients
- Pastry for Double-Crust Pie
- 1 1/2 c sugar
- 2 Tbsp butter, cut in 8-12 pieces
- 1/4 c all purpose flour
- 1/4 tsp ground nutmeg
- Dash of salt
- 3 beaten eggs
- 4 c. sliced rhubarb, sliced in 1/2 inch slices

Preparation
Step 1
1. Prepare crust, roll out bottom crust and line 9-11 inch pie plate.
2. Preheat oven to 400 degrees. Mix flour, sugar, nutmeg and salt together. Add the beaten eggs, then stir in the rhubarb.
3. Fill the bottom crust with the rhubarb mixture.
4. Dot with the butter
5. Roll out top crust and cut into lattice strips.
6. Weave on top of rhubarb and crimp edges.
7. Bake at 400 degrees for 50 minutes, or until custard is set.
