Meat Lasagna

This recipe is way back from when I was in college at Indiana University. I am not quite sure where I got it from, but it is delicious and has stood the test of time. It is the only meat lasagna that I make. A tradition for the football team's "Thursday Night Dinners" at our house. Everyone loves it!

Ingredients

  • 1/2 pound hamburger
  • 1/2 pound sweet Italian sausage
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon minced onion
  • 1 small can tomato paste
  • 1 quart stewed tomatoes
  • 1 teaspoon oregano
  • 2 cups mozzarella, shredded
  • freshly grated parmesan cheese
  • 16 oz. small curd cottage cheese
  • 6 lasagna noodles

Step 1

For the meat sauce:
Brown the ground beef in a large pan with the garlic salt and minced onion, drain and set aside. Brown the sweet Italian sausage, being to sure crumble into tiny pieces. Drain.

In a stock pot mix together the can of tomato paste, stewed tomatoes, oregano, salt and pepper. Simmer on low for about 15 minutes. Combine the hamburger meat, sausage meat and tomato sauce together.

Boil the lasagna noodles according to the package directions. Add a little bit of olive oil to the water to prevent sticking. Drain.

To assemble the lasagna in a 9x13 pan layer the following:

1/3 meat sauce
3 lasagna noodles
1/2 cottage cheese
1/2 mozzarella cheese
grated parmesan cheese
1/3 meat sauce
3 lasagna noodles
1/2 cottage cheese
1/2 mozzarella cheese
grated parmesan cheese
1/3 meat sauce
Sprinkle top with a little extra mozzarella and parmesan cheese

Bake at 350 degrees for one hour until brown and bubbly.

Cool slightly before attempting to cut into squares.

Serve with crusty bread and a salad.
