Veal Florence

Ingredients

  • 1 - 1 1/2 lb. veal scallopini
  • Seasoned bread crumbs
  • 1-2 eggs
  • 1/2 red onion
  • 1/2 tsp. dry marjoram
  • salt and pepper
  • extra virgin olive oil
  • 4 cloves garlic, minced & divided in half
  • 1 tblsp. white cooking wine
  • 15 oz. diced tomatoes with juice
  • 1 tsp. lemon juice
  • 1 tblsp. Parmesan cheese
  • 1 tsp. olive oil

Preparation

Step 1

Bread veal with eggs and seasoned bread crumbs. Brown in olive oil and drain on paper toweling.

Slice the red onion and saute' with 2 cloves of minced garlic in pan with olive oil. Add marjoram, salt, and pepper. Place veal in a baking dish and top with a spoonful of the onion mixture in the center of each piece. Bake at 350* for 30 minutes.

In the meantime, heat olive oil in pan and add minced garlic, then tomatoes & juice. As they start to cook together, remove from heat. Add lemon juice, white wine, and salt and pepper to taste. Let cool. Add Parmesan cheese and top the veal with the sauce and serve.
