Ingredients
- 2 cup rolled oats - use gluten free if required.
- 2 tbs coconut sugar
- 1 1/2 tsp baking powder
- 1 tsp vanilla paste
- 6 egg yolks
- 3 tbs honey
- 1 tbs coconut oil or butter
Preparation

Makes: 12 biscuits
Preheat oven to 170
Grind the oats into a fine meal or flour in a blender then add to a mixing
bowl.
Add the coconut sugar and baking powder and stir through to
distribute the baking powder.
Make a well in the centre then add the yolks, honey and oil
and mix them together then stir the wet mix through the dry.
Continue until you get a thick dough then roll into balls
and place on the baking tray making sure to leave a good amount of room between
each ball as they will spread.
I mentioned in the heading how economical these are and now that you've seen the ingredients list you'd have to agree. Sometimes healthy eating can seem a little our of reach when your living on a budget but the fact is that's really not true. I am going to focus a bit on it in my future recipes.
