Wild Rice Soup (Creamy)

Ingredients

  • 1 stick + 1 tablespoon butter
  • 6 tablespoons flour
  • 3 cups Half & Half
  • 1 1/2 cup chicken or turkey, diced
  • 3/4 cup onion, chopped
  • 3/4 cup celery, chopped
  • 3/4 cup mushrooms, chopped
  • 2 1/2 cups cooked wild rice
  • 3/4 cup white wine
  • 1 teaspoon rosemary
  • 1 teaspoon thyme

Preparation

Step 1

Melt butter and add flour. Cook 2 minutes, but do not brown. Add Half and Half and one 1 1/2 cup of broth slowly; whisk constantly. Let come to a boil and cook 2 minutes. Add res of ingredients. Simmer 30 minutes. Garnish with shredded blanced carrot.
