Ingredients

  • 1 Recipe Lemon-Soy Marinade
  • 1 lb Extra-firm or firm tofu
  • 16 Ripe cherry tomatoes
  • 1 lg Green or Red bell pepper
  • 1/2 lg Red onion
  • 12 White button mushrooms

Preparation

Step 1

1. Prepare the marindade. Place tofu in a medium bowl Pour on 1/3 of the marinade, toss gently to coat. Cover and refrigerate 4-8 hours.

2. In large bowl, combine tomatoes, pepper, onion and mushrooms. Pour on the remaining marinade, toss well and let sit 4-8 hours (Cover and refrigerate if making more than 4 hours in advance)

3. Alternately thread tofu and vegetables on skewers. Cook over hot coals, about 15 minutes, turning skewers every 5 minutes. Brush with some of the leftover marinade a few times while cooking and again just before serving.
