White Chocolate Mousse

Ingredients

  • 8 oz white chocolate
  • 1 tb butter
  • 3 egg yolks
  • 2 tb sugar
  • 3 oz heavy cream

Preparation

Step 1

1) Melt butter and white chocolate over boiling water.

2) Whip egg yolks until soft then beat with sugar over water bath for 8-10 minutes until thick and pale.

3) Beat hevy cream to stiff peak (meringue).

4) Add yolk mixture to chocolate and mix.

5) Fold in cream, portions at a time.

6) Let sit for at least an hour refrigerated.

*1 oz butter to 1 lb chocolate will bring chocolate back if there is a problem
