Pesto Sauce

Ingredients

  • 2 C Fresh basil
  • 1/2 C Olive oil
  • 2 T Pine nuts
  • 2 Cloves of garlic (lightly crushed)
  • 1 t Salt
  • 1/2 C Freshly grated Parmesan cheese
  • 2 T Freshly grated Romano cheese
  • 3 T Butter

Preparation

Step 1

Put the basil leaves, olive oil, pine nuts, garlic and salt in the blender and mix at high speed
When evenly blended, pout into a bowl and mix in cheeses by hand
Beat in softened butter
Save a few tablespoons of the boiling pasta water before draining. Add 1-2 T of water to pesto mix
Pour over pasta
