Ingredients
- 2 C Fresh basil
- 1/2 C Olive oil
- 2 T Pine nuts
- 2 Cloves of garlic (lightly crushed)
- 1 t Salt
- 1/2 C Freshly grated Parmesan cheese
- 2 T Freshly grated Romano cheese
- 3 T Butter
Preparation
Step 1
Put the basil leaves, olive oil, pine nuts, garlic and salt in the blender and mix at high speed
When evenly blended, pout into a bowl and mix in cheeses by hand
Beat in softened butter
Save a few tablespoons of the boiling pasta water before draining. Add 1-2 T of water to pesto mix
Pour over pasta
