Sausage with Arugula and Peppers

Ingredients
- 2 T. coconut oil or butter
- 6 Italian or other flavored sausage (I use Open Nature - no preservatives or additives), sliced
- 14 oz can organic diced tomatoes
- 1 cup arugula
- 1/4 red onion, diced
- 1 bell pepper, seeded and sliced
- 2 cloves garlic, minced
- 2 t. green chili powder
- pinch of sea salt
- pinch of pepper

Preparation
Step 1
In a large skillet, heat oil or butter over medium heat. Add sausage, onion, garlic and peppers. Cook for about 8-10 minutes or until sausage starts to brown. Add tomatoes and spices and cook for until sauce is reduced. Add arugula and cook about 1 more minute.
Serve and enjoy.
