Sausage with Arugula and Peppers

Ingredients

  • 2 T. coconut oil or butter
  • 6 Italian or other flavored sausage (I use Open Nature - no preservatives or additives), sliced
  • 14 oz can organic diced tomatoes
  • 1 cup arugula
  • 1/4 red onion, diced
  • 1 bell pepper, seeded and sliced
  • 2 cloves garlic, minced
  • 2 t. green chili powder
  • pinch of sea salt
  • pinch of pepper

Preparation

Step 1

In a large skillet, heat oil or butter over medium heat. Add sausage, onion, garlic and peppers. Cook for about 8-10 minutes or until sausage starts to brown. Add tomatoes and spices and cook for until sauce is reduced. Add arugula and cook about 1 more minute.

Serve and enjoy.
