BLT Chicken Skillet

Bacon, lettuce, and spinach gives a fun summer taste to this easy skillet dinner that can be ready in less than 30 minutes.

Ingredients
- 1 Tablespoon oil
- 2 cups cut up boneless chicken pieces
- 1 teaspoon minced garlic
- 2 cups chicken broth
- 2 - 14.5 ounce cans basil, garlic, & oregano diced tomatoes
- 1/2 cup chopped cooked bacon
- 2 cups uncooked medium shell pasta
- 1 cup packed baby spinach leaves
- 2 cups shredded Parmesan cheese, divided
Preparation
Step 1
Heat the oil up in an oven-proof skillet*. Cook the chicken pieces until completely cooked through.
Stir in the garlic, broth, undrained tomatoes, bacon, and pasta. Bring to a boil. Cover. Reduce heat to medium and cook 12-15 minutes, or until pasta is tender.
Add the spinach leaves and stir until wilted. Stir in half the cheese. Sprinkle the rest of the cheese on top of the pasta. Place skillet in the oven and broil on high 1-2 minutes, or until the cheese starts to melt. Serve immediately. Serves 6. Refrigerate leftovers in a sealed container.
Yield: Serves 6
Notes
*If you do not have an oven-proof skillet, cover the pan with the lid and let it sit for a few minutes to melt the cheese.
