Blackeye Pea Salad

Ingredients

  • Dressing:
  • 2 (15oz.) blackeye peas, drained
  • 1/2 cup thin sliced purple onions
  • 1/2 cup green bell pepper strips
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 1/2 tsp. salt
  • 1/4 cup oil
  • 1 clove garlic, minced
  • 1/4 tsp. pepper
  • 1/8 tsp. hot pepper sauce

Preparation

Step 1

Mix dressing and pour over peas, onions and bell peppers. Chill 12 to 24 hours.
