Pasta Primavera

Ingredients
- 1/2 c olive oil
- 1 t minced garlic
- 1/2 Ib sliced mushrooms
- 2 small carrots cut with a julienn peeler
- 2 small zucchini thinly sliced
- 1 red pepper, seeded and thinly sliced
- 1 T parsley
- salt and pepper to taste
- grated Parmesan cheese
- 1 8 oz pkg Penne pasta

Preparation
Step 1
Cook pasta as directed on package. In a large skillet, saute garlic in olive oil until slightly browned. Add Vegetables and stir. Saute 3-5 minutes or until tender, stirring frequently. Toss vegetables and parsley with drained pasta. Sprinkle with grated cheese before serving. Serve with garlic bread and a green salad.
