Hearty Pea Soup

Ingredients

• 2 Tbs butter
• 3 large carrots,peeled and grated
• 1 onion,diced finely
• 3 cups frozen green peas
• salt and pepper to taste
• 3/4-1 cup instant oatmeal
• 7-8 cups water

Preparation

Step 1

In a large pot,place the onion and carrots into butter. Sautee until softened. Keep flame on medium and make sure butter doesn't burn,Add green peas and seasonings and cook a few more minutes.
Add water and bring to a boil. Lower flame to medium and cook for about 45 min.(Don't fill the pot to the top. The oatmeal will cause the soup to expand)
Add oatmeal,stir,and cook for 15 min. more.
