Spicy Cilantro Steak Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, pressed
  • 1/2 cup diced yellow onion
  • 3/4 pound top sirloin beef steak, trimmed and cut into 2-inch cubes
  • 1 teaspoon steak seasoning
  • 1 cup frozen whole kernel corn
  • 1/2 cup diced red bell pepper
  • 1 tablespoon chopped cilantro
  • Juice of 1/2 lemon
  • 2 teaspoons brown sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon cumin
  • 1 cup low sodium beef broth

Preparation

Step 1

Heat the oil in a large skillet over medium heat; add garlic and onion and saute for about 3 minutes. Toss steak with steak seasoning and add to skillet; cook for about 2 minutes or until browned. Add remaining ingredients and simmer for 8 to 10 minutes or until steak is cooked through.
Leanne’s Note: The sugar and spices in this recipe can be used as a dry rub for other meats such as chicken and pork.

LC SERVING SUGGESTION: Serve over Cauli-Rice (process cauliflower in a blender or food processor until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork). Add a big green salad on the side.
SERVING SUGGESTION: Serve over brown rice instead of Cauli-Rice.
