Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup banana, mashed
- 1/2 cup plain yogurt
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 box instant vanilla pudding (3.4 oz.)
- 1/2 cup miniature chocolate chips
Preparation
Step 1
In a mixing bowl, cream the butter and sugars until fluffy. Add the eggs, vanilla, banana, and yogurt and beat again.
Sift together the dry ingredients and slowly add to the butter mixture until it is just mixed. Stir in the chocolate chips by hand.
Fill muffin liners 3/4 full and bake at 350* for 24-25 minutes. Let cool slightly before eating. Store in a sealed container for 4-5 days. Makes 20 muffins.
