  • 6-8 Ib spiral ham
  • 1 1/2 cups Tawny Port Wine or Ruby Wine
  • 1/2 c honey
  • 2/3 c brown sugar

Step 1

Place the ham in a large baking bag. Pour the wine over the ham coating it completely. Tie the end of the bag and marinate the ham in the refrigerator, for at least three hours or overnight. Try to turn and coat the ham with the wine a few times.
Bring ham to room temperature. Remove ham from marinade, reserve liquid, and pat ham dry. Brush honey on ham, and then pack all around with brown sugar. Place ham in roasting pan, and pour reserved liquid in bottom of pan along with any leftover honey and brown sugar.
Bake, covered, at 225 for 3-5 hours. Remove cover, and continue to cook for about 1/2 hour, basting as necessary to develop a nice glaze. Allow to rest for 10 minutes before serving.
I've made this without using the wine. You place the ham in a roaster and double up on the honey and brown sugar, and follow the same instructions, omitting, the time to marinade.
