Gravy, Ina (The Barefood Contessa)

When she wanted a good gravy she just whips this up to use.

Ingredients

  • 1 1/2 1 1/2 cup onions
  • Butter
  • 2 cups chicken stock
  • little garlic
  • 1/4 cup flour
  • salt and pepper
  • Little brandy
  • 1/2 cup white wine
  • little heavy cream

Preparation

Step 1

Saute 1 1/2 cups onions and garlic in some butter until soft.

Add two cups chicken stock. Put all together.

Whisk in 1/4 cup flour and put in 2 quart stock pot. Add salt and pepper, a Little Brandy, 1/2 cup white wine and a little heavy cream last.
