Poultry, Lemon Herb Rub for Cornish hens

Ingredients

  • 1 Tablespoon dried thyme
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried sage, leaves crumbled
  • Salt & pepper
  • 2 Rock cornish hens (1 1/2 to 2 lbs each)
  • Stir together;
  • 3 Tablespoons fresh orange juice
  • 3 tablespoons soy sauce
  • 1/2 cup Apricot Preserves
  • Salt and pepper

Preparation

Step 1

Separate 1/2 of sauce and serve with Cornish Hens
Brush with other half of sauce
