Ingredients
- 12 (3x2x1 inch thick) slices angel food cake
- 1 (1 lb) container fresh strawberries, hulled and sliced
- 4 Tbsp. sugar
- 1 cup plain fat-free Greek yogurt
- 1 (6 oz) container fresh raspberries
- 1 (6 oz) container fresh blackberries
Preparation
Step 1
1. Preheat the broiler. Place the cake slices on a baking sheet. Broil 5 inches from the heat until lightly toasted, about 1 minute per side. Let cool completely.
2. Combine the strawberries and 3 Tbsp. of the sugar in a large bowl. Let stand stirring occasionally until the sugar dissolves and juices form, about 20 minutes.
3. Meanwhile mix the yogurt and the remaining 1 Tbsp. sugar.
4. Add the raspberries and blackberries to the strawberry mixture, stirring gently to combine.
5. Place 1 slice of cake on each of the 6 plates. Top each slice with 1/2 cup of the berry mixture and 1 generous Tbsp. of the yogurt mixture. Repeat with the remaining cake, berry mixture, and yogurt mixture to make 6 shortcakes.
