Ingredients
- 1/4 c. vegetable oil, divided
- 2 large eggs
- 1 c. diced ham
- 1/2 of a large red bell pepper, diced
- 1/2 of a large sweet onion, diced
- 1/2 c. frozen sweet peas, thawed
- 3 c. cooked rice, cooled
- 1/4 c. soy sauce
- 1 t. chili-garlic sauce
- 4 green onions, sliced
Preparation
Step 1
Heat 1 T. of oil in a large skillet at medium-high heat 2 minutes. Add eggs; cook 1 minute on each side. Remove from skillet; chop and set aside.
Heat remaining 3 T. of oil in skillet; add ham and stir-fry 1-2 minutes. Add bell pepper and onion; stir-fry 5 minutes. Add peas and next 3 ingredients; stir-fry 3-4 minutes.
Stir in egg and sprinkle with green onions.
