Ingredients

  • 1 lb ground pork
  • 1 onion, diced
  • 1 lb fresh green beans, french cut
  • 1 carrot, diced
  • 1/4 lb bean sprouts
  • 1 small can corn
  • 2 packages eggroll wrappers
  • salt
  • soy sauce
  • vegetable oil

Preparation

Step 1

Heat 2 T vegetable oil, brown 1/2 diced onion with ground pork and add 1/4 t. salt, 2 t. soy sauce and simmer until pork is tender. Drain and put aside.

Heat 2 T vegetable oil, brown other half of onion, green beans and carrots and add 2 T water and simmer until tender. Do not over cook. Add to ground pork.

Bring to a boil 3 cups of water and add bean sprouts for 2 minutes. Drain them and mix with pork and vegetables. Drain canned corn and add to mix. Season to taste with salt, pepper and soy sauce if needed.

Let mixture drain and cool before wrapping. Fry in an inch of oil until golden.
