Ingredients

  • Salad:

  • 1

    pear, peeled and quartered

  • 8

    oz mixed greens

  • 1

    oz walnuts

  • 1

    oz crumbled blue cheese

  • 4

    oz walnut vinaigrette

  • Poaching Liquid:

  • 2

    cups port wine

  • ½

    cup brandy

  • ¼

    cup sugar

  • 6

    each cloves

  • ½

    tsp cinnamon

  • 2

    cups water

  • Walnut Vinaigrette:

  • ½

    cup lemon juice

  • ¼

    cup dijon mustard

  • 1

    cup walnut oil

  • 2

    tsp sugar

  • 1

    tsp honey

  • 1

    cup vegetable oil

Directions

Salad: 1) Combine poaching liquid ingredients. Bring to a boil. Add pear quarters and simmer for 20 minutes until soft. Remove pears and reserve liquid. Vinaigrette: 1)Combine lemon juice, mustard, honey, sugar and slowly add oils while mixing. * Serve walnuts next to greens, poached pears sliced in fours and spread out fan-like, blue cheese next * Greens take up 2/3 of plate * Freeze poaching liquid for a sorbet
