Ingredients
- 3 cups unsifted all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter or margarine softened
- 3/4 cups sugar
- 2 eggs
- 1 can ( 20 ounce) crushed pineapple well drained, reserving 1 cup syrup
- 1 1/2 teaspoons vanilla extract
- 1 cup packaged, flaked coconut
- 1 jar ( 3 1/2 ounces) macadamia nuts chopped (3/4 cup)
Preparation
Step 1
Combine flour, baking powder, baking soda, and salt, set aside. In a large bowl cream butter and sugar and beat until fluffy. Beat in eggs and add alternately, flour mixture and pineapple juice. Fold in vanilla, coconut, macadamia nuts, and crushed pineapple and spoon into 2 loaf pans.
Bake 350 degrees 55 to 60 minutes.
