Thai Chicken

Ingredients

  • 2 1/2 lbs chicken pieces
  • 1 cup salsa
  • 1/4 cup peanut butter (1/2 cup is better)
  • 2 Tbsp. lime juice
  • 1 Tbsp. soy sauce
  • 1 tsp. minced fresh ginger
  • 1/2 cup peanuts, chopped
  • 2 Tbsp chopped fresh cilantro

Preparation

Step 1

Place chicken in crockpot. Mix together salsa, peanut butter, lime juice, soy sauce and ginger; pour over chicken. Cover and cook on low for 8-9 hours or on high for 3-4 hours until done. To serve, pour sauce over chicken; sprinkle with peanuts and cilantro.
