Banana Walnut Bread

Ingredients

  • STREUSEL TOPPING (Opt):
  • 1 cup sugar (or 1/2 cup plus container of no-sugar added applesauce)
  • 2 Tbsp shortening or butter
  • 1 tsp vanilla
  • 2 eggs
  • 1 1/2 cup sifted flour
  • 1 tsp salt
  • 1 Tbsp ground flax seed (opt)
  • 2 ripe, mashed bananas
  • 1/3 cup buttermilk
  • 1 tsp baking soda
  • 1 cup chopped walnuts (or choc chips)
  • 1/3 cup brown sugar
  • 2 Tbsp flour
  • 1/2 tsp cinnamon
  • 2 Tbsp cold butter

Preparation

Step 1

Cream sugar, shortening and vanilla. Add eggs one at a time. Mix flour, salt and flax seed together and slowly add to above mixture. Add bananas. Combine the soda with the buttermilk and slowly add to mixture, stirring and scraping the sides as you pour. Add the walnuts. Pour in a greased and floured 9x5 in bread pan. Bake at 350 degrees for 50 minutes. Add the streusel topping on top of bread after 15 min of baking.
