Ingredients
- 4 cups water
- 1 3 (ounce) package crab-boil seasoning in bag or Homemade Crab-Boil Seasoning (see recipe below)
- 1 lb fresh or frozen shrimp in shells
- 1 cup chopped celery
- 1 cup coarsely chopped red or green sweet pepper
- 1/2 cup chopped onion
- 1 cup low-fat mayonnaise
- 3/4 teaspoon Cajun seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Lettuce Leaves
Preparation
Step 1
In a large saucepan combine water and crab-boil seasoning. Bring to a boil. Cover and simmer for 15 minutes. Add shrimp. Return to boiling. Reduce heat; simmer for one to three minutes or until shrimp turn pink. Drain; rinse with cold water. Pell shrimp and remove vein that runs down the back. In a large bowl toss together shrimp, celery, chopped pepper and onion. Stir together mayhonnaise, Cajun seasoning, salt and pepper. Stir into shrimp mixture. Chill. Serve on lettuce-lined plates with crackers.
Serves four.
HOMEMADE CRAB-BOIL SEASONING:
In a double layer of cheesecloth combine 3 tablespoons, mustard seed, 3 tablespoons, whole coriander, 8 bay leaves (crumbled). 1 tablespoon whole allspice, 2 teaspoons whole cloves and 1 teaspoon crushed red pepper. Tie bag. Add bag to water and proceed as directed.
