Potatoes, Bourbon Sweet Potatoes

Made this several Christmas' Everyone loved this dish.

Ingredients

  • 2 (29 ounce) cans sweet potatoes, drained and mashed
  • 3/4 cups firmly packed brown sugar
  • 1/2 cup butter melted
  • 1/4 to 1/3 cup burbon
  • 1/2 teaspoon vanilla extract
  • 2 cups miniature marshmellows.

Preparation

Step 1

Combine first 5 ingredients, mixing well. Spoon mixture into a lightly greased 1 1/2 quart casserole. Cover, and refrigerate 8 hours or overnight.

Remove from fridge, let stand 30 minutes. Bake uncovered 350 degrees for 25 minutes. Remove from oven. Top with marshmellows. Bake additional 7 minutes or until marshmellows are golden.
