Creamy Quesadillas

Ingredients

  • 1 C. ricotta cheese
  • 1/4 C. crumbled feta cheese
  • 6 oz. shredded mozzarella
  • 1/2 C. chopped tomato
  • 3 T. finely chopped parsley
  • Salt and pepper
  • 6 small flour tortillas, cut in half
  • 3 T. vegetable oil
  • 1 C. salsa
  • Sour cream

Preparation

Step 1

1. Preheat oven to 400 degrees. Stir together the cheeses,tomato, parsley, salt and pepper. Spread filling onto each tortilla half; fold over and press down.
2. Brush each side with oil; bake for 5 minutes on each side, until crisp.
3. Serve with salsa and sour cream.
