Chicken & Dumplings

Ingredients

  • 1/2 C. chopped onion
  • 1/4 C. butter
  • 1/2 tsp. salt
  • 2/3 C. flour
  • 1 (10 1/2 oz) can condensed chicken broth
  • 1 C. water
  • 2 1/2 C. cubed cooked chicken
  • 1 1/2 C. frozen mixed vegetables, thawed
  • 1 C. sour cream
  • 1 can Pillsbury Grands southern style biscuits
  • Chopped fresh parsley
  • Paprika

Preparation

Step 1

1. In large skillet, cook and stir onion in butter until tender. Stir in flour and salt; blend until smooth.
2. Add chicken broth and water. Cook, stirring constantly, until thickened. Stir in chicken, vegetables, and sour cream; simmer over low heat until thoroughly heated.
3. Separate dough into 8 biscuits; cut each biscuit in half. Place biscuits on top of hot mixture. Simmer uncovered 10 min. Cover; simmer over low heat 15-20 min. or until biscuits are no longer doughy. Garnish with parsley and paprika.
