Ingredients

  • I carrot

  • 1

    green pepper

  • 1

    tbsp vegetable oil

  • 1

    small onion, chopped

  • 1

    garlic clove, crushed

  • 1

    in piece root ginger, peeled and grated

  • ½

    tbsp cornflour

  • cups chicken or vegetable stock

  • 2

    tbsp tomato puree

  • 1

    tbsp soft dark brown sugar

  • 2

    tbsp white wine vinegar

  • 2

    tbsp rice wine or sherry

  • salt and pepper

  • cucumber, to garnish

Directions

Peel the carrot and cut into matchstick-sized strips. Quarter the pepper, discard the stalks, seeds and membrane and cut into strips. Heat the oil and fry the onion and garlic until soft but not brown. Add the carrot, pepper and ginger and cook for a further minute. Remove from the heat. Blend the comflour with a little stock and add to the vegetables, together with the remaining ingredients. Stir over a moderate heat until the mixture boils and thickens. Simmer uncovered for 2-3 minutes until the vegetables are just tender. Adjust the seasoning and serve with strips of stir-fried pork or chicken and with rice or noodles.
