Ingredients
- 2 tsp margarine
- 1/4 cup thinly sliced celery
- 1 sm clove garlic, minced
- 1 cup sliced zucchini
- 1/2 cup canned crushed tomatoes
- Dash each oregano leaves and pepper
- 2 oz mozzarella cheese, shredded

Preparation
Step 1
1. In an 8 inch skillet heat margarine until bubbly and hot; add celery and garlic and saute until garlic is lightly browned be careful not to burn.
2. Add zucchini and saute until tender-crisp; stir in tomatoes and seasonings and let simmer until zucchini is tender and almost all of the liquid has evaporated, about 5min.
3. Transfer zucchini mix to microwave safe plate, sprinkle with cheese, and microwave on high until cheese is melted about 1 min.
